    Healthy Chicken Tacos

We love tacos around these parts. And we’re making them at least once a week. When you are busy like we are with work and kids, getting home and cooking a healthy weeknight meal could be challenging. Tacos are a great addition to our rotating dinner list because they are easy to make. They don’t require much effort or time, which is nice. Usually we go with beef tacos and I can’t remember the last time we had chicken tacos. Well, I needed to switch things with these quick healthy chicken tacos on iceberg lettuce. Chicken tenders are ideal for this recipe, which I boiled for about five minutes, shredded…

    Cranberry Apple Muffins

Fall is upon us, my friends! It is my favorite season of them all. Why? Because I love the cooler temperatures, open windows, long sessions of stove top cooking, baking, and all the spices and aromas that come with the season. Give me all the cinnamon, apples, pumpkins and these seasonal Cranberry Apple Muffins. I’m a sucker for it all. This easy muffin recipe is perfect to awaken your fall senses. The apples, cinnamon and cranberries make a great satisfying mix and are great for on the go eating. These are ideal for a quick breakfast especially when warmed up a tad with a touch of butter. Yum!  Because butter…

  • Harissa Chicken and Carrot Salad with Yogurt Sauce

I came home from work today without any dinner plans. I opened my fridge and had chicken thighs out that needed to be cooked. Here’s what I came up with: I was going for something easy, flavorful and light. I am a huge fan of chicken thighs and this marinade is perfect for them. The cast iron skillet gives them a nice flavorful crust too. Yum! The carrot salad is refreshing. The ACV, tarragon, garlic and the cayenne pepper make a great mix. Add the red onions and the carrots and you got yourself a nice crunchy bite. The garlicky yogurt sauce brings everything together very nicely.  The addition of…

  • Caldo de Pollo – Chicken Soup

Looking for a flavorful, hearty and delicious bowl of soup? Then, this one is for you! I’m a sucker for Mexican spices. Any recipe with Cumin and Mexican Oregano in it is a winner in my book. Now mix these spices with a warm broth, chicken and noodles, and you’ve got yourself a delicious, comforting mix of YUM! Did I mention that this recipe shouldn’t take you more than 30 minutes to make? Oh, and if you go the shredded chicken route (read the TIP below), it should take less than 20 minutes. Will you join my Mexican spices obsession?? Start making this soup and let me know what you think.…

  • The Best Chili Recipe

Back revisiting this favorite of mine. This time though, I made a vegetarian batch of The Best Chili Recipe. I nixed all the meat and the beer, and I added mushrooms to the mix. It was just as delicious. Of course I garnished my portion with avocado slices. Because I love my avocados on anything. Don’t you? Need the non vegetarian version of this recipe? Keep scrolling… I’ve been using this chili recipe for the past 10 years, at least. I’m pretty sure I mixed a few recipes from various sources to get to this lovely mix of spices. We love it at our house! This recipe makes a large…

  • Cauliflower Fritters

These beauties came together with the help of a fridge clean out… The cauliflower needed to be used or tossed. So it got used! Do you ever buy something at the grocery store simply because it looks good and fresh?  Without any actual plans for it? I do it all the time. Luckily, most of the time, said item yields something quite delicious and it’s a pleasant surprise… There are also times when said item gets tossed and that’s a real shame. The guilt is real! These fritters are made exactly how I would make potato pancakes. I love potato pancakes. I also love cauliflower. This was a no-brainer. Cold-ish…

  • Orecchiette with Peas

This is a simple pasta dish to accompany any protein or salad for a quick dinner. I used leftover grilled Italian sausage for a quick Monday evening dinner. I could also imagine this pasta dish served with baked or grilled chicken. Nix the meat and serve it with a side salad. You’ve got many options with this easy dish. It is tasty, creamy and oh so comforting. Now, get to cooking and let me know what you think. Also, don’t forget to follow my blog for more recipes like this one.

  • Pork Chop Dinner for Two

If you are a Michigan resident and you like fresh meat from animals raised on a family farm, give John Henry’s a try. No, I am not sponsored by them. However, I’ve been a customer for quite some time and have enjoyed every single order from their farm. I usually order a bundle and exhaust every piece of everything; including the bones. These pork chops were delivered fresh, last week. Since I was going out of town, I had to freeze them. But that didn’t take away from their deliciousness at Sunday’s supper. This is such a simple recipe with great fresh flavors. The asparagus and apple mix make a great side…

  • Easy Crunchy Egg Rolls

These egg rolls are so delicious and come out extra crunchy. I love them! The sweet chili sauce for dipping is killer too. I make these with ground beef but they are also delicious with pork or a beef and pork mixture. Scratch the meat all together for a vegetarian option. Let me know how you like them!

  • Refreshing Bourbon Cocktails

Who doesn’t love a tasty and refreshing cocktail? I know I do! Especially while trying to unwind after a long day or a long and busy week. Now, I have to say that I am new to the Bourbon craze. Frankly, I don’t know much about Bourbon. But, the few cocktails I have tasted here and there, from my husband ordering them at a bar or restaurant, awoke my senses. It is definitely an acquired taste; the more I drink it, the more I like it. Don’t judge me! 😉 So I toyed around with some simple syrup varieties and decided to try a bourbon cocktail using a jalapeno batch…
