  • Watermelon Salad

I was obsessed over watermelon salads all summer long. Actually, I am still obsessing… I tried many variations and none of them disappointed. This mix was especially crisp and tasty. The crunchy cucumber, juicy watermelon, sweet mango, spicy jalapeño and the basil make a wonderful union. Then, you add the dressing and OMG. I made this for some wonderful ladies a few weekends ago, while we were spending a weekend away at a beautiful cottage on Lake Huron. It was a side dish next to chicken kabobs served with naan and hummus. The best! So hurry up, friends… make this salad before summer comes to an end. Or, make this…

  • Turmeric+Ginger Pancakes

Over the weekend, I made a batch of pancakes as per the request of my boys. I make my pancakes from scratch and they love them. The recipe below, makes a batch of about 10-15 pancakes. I tend to freeze about half each time and they re-heat in a toaster or microwave really well. I decided to play around and added the power spices, turmeric and ginger, to a batch for myself. No, my kids did not eat these! They prefer them plain dipped in honey or syrup, of course. I also sliced up some sweet peaches for a few of them as well as blueberries. I finished them off…

  • Lamb Meatballs + Eggplant Dip + Cucumber Salad

Okay, there’s a lot going on in the title, I know. But trust me, it’s not that bad. This dish came together very nicely; it is fresh and so filling. The eggplant dip is something I’ve been making with my family since childhood. A favorite in our family and probably a favorite with most Eastern Europeans. As a kid, I was always involved in the kitchen. I was often tasked to make the mayonnaise, from scratch, for this eggplant dip. My grandma would bake fresh bread and the anticipation to spread the dip on a warm slice of bread was killing me, every time! A fresh tomato from the garden…

  • Cucumber & Tomato Salad

Are you looking for something fresh, healthy and delicious to make or bring to a summer party? Check out this salad!  Growing up, this type of salad was always on our breakfast, lunch and dinner table. We were lucky to have fresh veggie from the garden, too.  You can mix this up by adding radishes or even thinly sliced peppers. You can’t mess this up, really!  I used to eat this salad with fresh homemade bread and butter. I mean I used to dip the bread in the leftover dressing. Try it. I bet you will love it too!  I made this batch for a crowd. Cut it down for…
