    Healthy Chicken Tacos

We love tacos around these parts. And we’re making them at least once a week. When you are busy like we are with work and kids, getting home and cooking a healthy weeknight meal could be challenging. Tacos are a great addition to our rotating dinner list because they are easy to make. They don’t require much effort or time, which is nice. Usually we go with beef tacos and I can’t remember the last time we had chicken tacos. Well, I needed to switch things with these quick healthy chicken tacos on iceberg lettuce. Chicken tenders are ideal for this recipe, which I boiled for about five minutes, shredded…

    The Brunch Edition

This brunch came together due to the rainy, icy Sunday we had last week. Thank you, Spring! In a way I’m thankful but then I’m not. This ugly weather canceled our plans for the day and we were confined, yet again, to the house. What’s better than spending the day cooking and eating?? Especially when you’re in the house with all your loves and you have delicious mimosas and beermosas flowing… Not a whole lot, right?! In comes The Brunch Edition. Everyone loves brunch! I even got my husband to love brunch. When we first met he proclaimed that he didn’t eat breakfast, EVER. I was shocked as I love…

  • Mango+Peach+Mint Sorbet

This summer treat is the easiest to make and it is so delicious. You can even make it a boozy treat if you wish, for all the adults (21+) at your party. I added a little Elderflower liquor like St-Germain to the mix, but I suspect that it would be delicious with Rum, Tequila and even Vodka.

  • Spirulina+Coconut Oatmeal Bites

Have you heard of Spirulina powder? I started using it last week actually, in a smoothie bowl. I loved it. This morning I decided to make oatmeal bites using Spirulina powder. They came out great and they were so easy to make. The recipe is very similar to the oatmeal bites I have made in the past, only it’s even easier and with less ingredients. This article by the Welness Mama on Spirulina is a nice easy read. Read it here Spirulina Benefits if you are interested in it. Based on this article and many others I read on Spirulina, I decided to try it mostly because of all the running I’ve…

  • THE PERFECT ICED COFFEE

I love my coffee. I usually drink two cups in the morning and I’m set for the day. However, there are some days when I need a quick mid afternoon pick me up. Don’t we all??? I like the taste of instant coffee. I also like that it’s so easy to use and that I can make a quick cup with it; hot or cold. Here, I made an iced coffee with coconut milk and it was just what I needed. Grab the recipe and enjoy!!

  • Lamb Meatballs + Eggplant Dip + Cucumber Salad

Okay, there’s a lot going on in the title, I know. But trust me, it’s not that bad. This dish came together very nicely; it is fresh and so filling. The eggplant dip is something I’ve been making with my family since childhood. A favorite in our family and probably a favorite with most Eastern Europeans. As a kid, I was always involved in the kitchen. I was often tasked to make the mayonnaise, from scratch, for this eggplant dip. My grandma would bake fresh bread and the anticipation to spread the dip on a warm slice of bread was killing me, every time! A fresh tomato from the garden…

  • BANANA BREAD WITH CHIA SEEDS

Happy Friday, everyone! I was up early this morning and for once my boys slept in a little. By little, I mean they woke up at 7:15 AM instead of 6:30 AM. We are making progress in the Hiller household with this sleeping-in situation. Because I started the day in good spirits, I decided to treat my co-workers this morning by making this easy banana bread. This is what a little time on my hands will do. Oh, and several ripe bananas played a key role. The finished product was quite tasty and it was well received. As for the Chia Seeds, I’ve been using the Wheat Montana – Organic Whole…

  • Watermelon + Prosciutto + Mint Salad

Well, you won’t find a more refreshing mix than this one for a salad. This salad screams SUMMER and I love it!!! Take 15 minutes out of your busy day and make this. You will love it too. And if you don’t, you can drop it off at my house so I can eat it. If you are hosting a party, I promise that your guests will be impressed with this mix as well. Play around and mix this up with various seasonal ingredients; add cantaloupe, peaches, blackberries, and even your favorite crumbled cheeses. Pure deliciousness and OH so fresh and light. I served this with a soft boiled egg…

  • Apple Turmeric Ginger Oatmeal Muffins

Here we are… Another mid-week Oatmeal Muffin post. Wednesday came quite fast this week and I’m not complaining. I am looking forward to Mother’s Day this weekend and spending time with my guys and family. I sure hope we get some sunshine and warmer weather to celebrate. I decided to play around with the Oatmeal Muffin recipe I had posted last week. I know, the title is a mouthful, but wanted to make sure you all are aware of what is in these bad boys. They are so delicious, nutritious,  and are packed with spices that are beneficial to your health. I even had my pickiest eater fooled into eating…
