  • Healthy Steak Salad

    Making this salad was the highlight of my Sunday afternoon. It takes little time and you can prep some of the items way ahead of time. I cooked the beets earlier in the day and refrigerated them until I was ready to plate the salad. I also cooked the marinade and got that set in the fridge with the steak early on in the day. When it came to dinner time, my husband grilled the steak while I build the rest of the salad. It’s all about team work, folks. It makes things so much easier. Give this a try. You will love it.     I was obsessed over watermelon salads all summer long. Actually, I am still obsessing… I tried many variations and none of them disappointed. This mix was especially crisp and tasty. The crunchy cucumber, juicy watermelon, sweet mango, spicy jalapeño and the basil make a wonderful union. Then, you add the dressing and OMG.     Okay, there’s a lot going on in the title, I know. But trust me, it’s not that bad. This dish came together very nicely; it is fresh and so filling. The eggplant dip is something I’ve been making with my family since childhood. A favorite in our family and probably a favorite with most Eastern Europeans.   • Bean Salad

    I love the freshness of this salad. It is also super light and easy to make. I used fresh beans which I soaked over night and then boiled in salty water with a bay leaf, for about 45 minutes. You can use canned beans if you wish. I basically cleaned out my fridge with the rest of the ingredients in this dish. Nothing goes to waste in this house. Here’s the recipe. Enjoy!
