Fridge clean out meals are always the best meals.. When I’m in the mood, I sure love being creative with ingredients I have on hand.

✨What type of cook are you? Can you wing it or do you need a recipe to follow?✨

This is my idea of cauliflower nachos. I sliced up a head of cauliflower and roasted it with spices. I also sautéed a pepper and onions and placed them on top of the cauliflower in the sheet pan. I used shredded #chicken that I seasoned with taco seasoning. And topped it all with lettuce, jalapeño, pickled red onions (obv), and radish. I would add some sort of sauce to it next time, perhaps a avocado crema… Yum!

A salad made with baby greens tossed with oil, vinegar, salt and pepper. Topped with grilled chicken, cucumbers, strawberries, apple slices, pickled red onion, and a little side of hummus.

Who’s hungry?

I recently discovered and I love the @sietefoods tortillas and have been making them with eggs/egg whites for a few weeks. So good.

Here, I used three egg whites and one yolk to make the egg tortilla, paired it with kiwi, blueberries, tomatoes and cucumbers. Gotta get those veggies in.

Of course, I also used the everything but the bagel seasoning from @traderjoes and my favorite @chosenfoods Avo oil spray 👍

Burger bowl for the win… always!

Extra lettuce, a little cheese, red onion, a side of sweet potato fries and a side of tomato, cucumber, and avocado salad. I also mixed a little avocado oil Mayo with Frank’s red hot for dipping my fries.

This is an amazing combo and a summer fave!!

I teamed up with my friends @eatrevfarms to bring you this yummy recipe! Their Bam! Baby Kale is the best and perfect for pesto, amongst other things.

🍃 Kale Pesto Recipe 🍃

1 package Bam! Baby Kale
2-3 cloves garlic
1 tbsp nutritional yeast
1/2 tsp Kosher Salt
1/2 tsp black pepper
1/2 cup avocado oil

First, blanch the baby kale. Bring a medium pot of water to a rolling boil, season with salt, and add the baby kale. Boil the kale for 1 minute and then drain really well. When cool you may use your hands or paper towel to remove some of the water.

Add the kale, garlic, nutritional yeast, salt, and pepper to a food processor or blender and mix well. Then, slowly add the avocado oil as the mixer is on.

Your pesto is done!

You can substitute Parmesan cheese for nutritional yeast if you’d like and you can always add nuts to this pesto as well.

Great on pasta (I used @eatbanza here) eggs, grilled meats, as a dip, and so much more! Enjoy!

I boiled them for a few minutes in salty water then cut them up and tossed them in Avocado oil and sprinkled them with fresh herbs from the garden; oregano, thyme and rosemary.

I placed them in foil and on a charcoal grill until fork tender. 👌

Here’s a delicious mix made with @eatrevfarms Zesty Zing Mix, cucumbers, radishes, tomatoes, red onions, strawberries, and shrimp. Tossed with my favorite dressing that screams #summer 👇

Zesty Zing is a mix of Arugula, Mustard Greens, Sweet Crisp and Green Romain. Greenhouse grown right here in Michigan. Find a store near you - link in bio! #partner

This dressing is so delicious and reminds me of summer salads. Here’s the recipe:

Summery Dressing

1/4 cup apple cider vinegar or lemon juice
2/3 cup avocado oil
1 tsp Dijon Mustard
2 tsp celery seeds
1 tbsp minced onion, dried
Pinch of Kosher Salt
1 tbsp maple syrup (adjust to taste)

Add all ingredients except the oil to a food processor or blender. Process and slowly add the oil. Refrigerate over night then bring to room temp before serving on your favorite lettuce mix from Revolution Farms. 🥗🥗🥗

Perfectly delicious, healthy, and satisfying lunch. That’s if #tofu is your thing. A side of fruit and nuts too!

Every once in a while I find myself placing a package of tofu in my shopping cart. Just to switch up the protein in my diet. Do you cook with tofu?

Sautéed the tofu with mushrooms and water chestnuts. A little red onion, lots of garlic, liquid aminos, sesame oil, rice vinegar, and fresh ginger. 👌 You can easily sub ground chicken, beef or turkey for the tofu here. I’ve made it with chicken plenty of times. 🤤

Have you tried the frozen salmon burgers from @traderjoes ? First timer here and they are quite tasty. Especially when you need something that can be made quickly.

I used a @odoughs vegan sandwich thin, @eatrevfarms zesty zing lettuce mix, cucumber ribbons, red onion, and avocado for this burger. 👌

Scrambled egg whites with spinach. Seasoned with salt, pepper and a pinch of cumin. A side of berries, homemade salsa @growingupsarita and @sietefoods tortilla chips. I was craving that crunch!

It’s easy when you have all the goods in the fridge. Grilled chicken - pre grilled on Sunday, romaine, cabbage mix, baby tomatoes, cucumbers, kiwi, radish, and avocado.

I tossed the cucumbers, tomatoes, and radish with ACV, salt and pepper. Then added them on top of the greens. No additional dressing needed.

Yum!

Brussels, sweet potatoes, and butternut squash tos

Brussels, sweet potatoes, and butternut squash tossed with a splash of avocado oil, salt, lots of pepper, and garlic powder. That’s all you need.

Roast at 400° for 20-25 minutes. Pair with a protein of your choice; eggs, chicken, steak, pork tenderloin, etc.
