An easy meal to make ahead. So refreshing especially during the summer months. Try it!!

Vinaigrette Recipe:

1/4 cup avocado oil
2 tablespoons Red Wine Vinegar
2 tablespoons lemon juice
1 teaspoon Dijon Mustard
1 teaspoon honey
Kosher Salt and Pepper to taste

I’m in love with this salad!!!

A simple dressing made with avocado oil, red wine vinegar, Dijon mustard (Don’t mind the sticky mustard 😆) , pecorino Romano cheese, salt and pepper. Add all of your favorite ingredients and enjoy!

I added chickpeas, cucumbers, tomatoes, olives, one slice of cheddar cheese, four slices of hard salami (always @boarshead_official ), one 8 minute egg, and more pecorino Romano cheese. Done! Try it with chicken breast or a piece of salmon! 👌

#proteinwaffles I was introduced to these a few years ago by @itsdebbierupp and have been making them regularly since. They are great alone, paired with a huge salad, and perfect when frozen and toasted for on the go meals. Try them!

1 cup rolled oats
1 cup egg whites
1 cup fat free cottage cheese
Blend until smooth and use about 1 cup batter per waffle in a Belgian Waffle maker 👌

📸 All you need is toothpicks, mozzarella, cherry tomatoes, basil and balsamic glaze. Mix it up by adding a little prosciutto between the mozzarella and basil👌 Enjoy!

Easy Chicken Meatballs 1 lb ground Chicken or Tu

Easy Chicken Meatballs

1 lb ground Chicken or Turkey
1/2 cup breadcrumbs (see note below)
1/4 cup Parmesan Cheese
2 garlic cloves minced
1/2 tsp Kosher Salt
1/4 tsp black pepper
1/2 tsp Italian Seasoning
1 egg

Mix all ingredients together. Form meatballs to desired size. I used a tablespoon sized scoop.

Bake at 400° for about 25 minutes.

Note: I used two slices of Ezekiel Bread, well toasted, and chopped for the breadcrumbs. Add 1/4 tsp crushed red pepper for a little spice if you’d like.

Serve with a side of veggie noodles. On a salad. On a pita with lettuce, tomatoes, pickled red onions and favorite dressing. With hummus and veggies…. So many options. Enjoy! Great for #mealprep of course.
