It is a shame that summer has passed and I did not It is a shame that summer has passed and I did not make this salad once. I guess it’s never too late though. This is a crunchy, fresh, delicious mix. Made with all the sweet watermelon, mango, peppers, cucumbers, basil, and a simple dressing made with @marukanvinegar Genuine Brewed Rice Vinegar, ginger, salt and pepper.  Recipe is on my blog although this version is slightly modified as I was missing some of the ingredients. A simple salad with tomatoes, avocado, onion, lime juice, salt and pepper. Seasoned the shrimp with salt, pepper, cumin, smoked paprika and garlic powder. Cooked the shrimp and added to a large tortilla with cheese then toasted it to perfection. Yum!

Grilled Chicken Caesar salads with @chosenfoods fo Grilled Chicken Caesar salads with @chosenfoods for Sunday supper. Crispy romaine lettuce, crunchy homemade croutons, grilled chicken, and a delicious Caesar dressing with avocado oil mayo. Yum! @chosenfoods 100% Avocado Oil products are my go to for healthy fats with a high smoke point, and neutral flavor for all types of meal prep. 

I marinated the chicken breast in a mix of avocado oil, garlic powder, onion powder, Dijon mustard, lemon juice, salt, and pepper. Grilled to perfection with a spray of Avocado Oil. 

For the croutons, I used a French baguette cut into pieces, tossed in avocado oil, salt, and pepper then air fried for 3 to 4 minutes at 400° 

Caesar Dressing 
2 small garlic cloves minced
1 teaspoon anchovy paste
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup Avocado Oil Mayo 
1/2 cup grated parmesan 
1/4 teaspoon salt
1/4 teaspoon pepper 
Mix all of the ingredients and refrigerate for at least 30 minutes before serving.

My own version of the delicious Chinese dish, Kung My own version of the delicious Chinese dish, Kung Pao Shrimp. 

Easy to make and re-heat for a yummy lunch or dinner. 

Here’s what you’ll need:

¼ cup coconut aminos
1 tsp sesame oil
1 tsp honey
¼ tsp red pepper flakes
1 tsp cornstarch
1 tsp Gochujang or sriracha 
1 tbsp water
4 garlic cloves minces
1 red bell pepper cut into chunks
1 yellow bell pepper cut into chunks
1 pound large shrimp peeled and deveined
¼ cup peanuts
Cooked rice - I used the microwaved organic jasmine rice from @TraderJoes
Steamed baby broccoli 

Heat a large skillet on medium heat.

In a small bowl combine coconut aminos, sesame oil, honey, cornstarch, gochujang, water, and minced garlic. Set aside.

Add oil to the heated skillet. 

Add the peppers and sauté until tender, yet still crunchy. 

Add the shrimp and cook until they are pink.

Next, add the sauce and cook for two minutes or until the sauce is thickened a bit. Remove from heat. 

Divide the shrimp, rice, and steamed broccoli into four meal prep containers. I used 1/3 cup rice and 6-7 shrimp per container. Sprinkle the peanuts on top of the shrimp. Enjoy! 

Tip: Gochujang is a #Korean hot sauce that I really love. Try it!!
