My own version of the delicious Chinese dish, Kung

My own version of the delicious Chinese dish, Kung Pao Shrimp.

Easy to make and re-heat for a yummy lunch or dinner.

Here’s what you’ll need:

¼ cup coconut aminos 1 tsp sesame oil 1 tsp honey ¼ tsp red pepper flakes 1 tsp cornstarch 1 tsp Gochujang or sriracha  1 tbsp water
4 garlic cloves minces 1 red bell pepper cut into chunks 1 yellow bell pepper cut into chunks
1 pound large shrimp peeled and deveined ¼ cup peanuts
Cooked rice - I used the microwaved organic jasmine rice from @TraderJoes
Steamed baby broccoli

Heat a large skillet on medium heat.

In a small bowl combine coconut aminos, sesame oil, honey, cornstarch, gochujang, water, and minced garlic. Set aside.

Add oil to the heated skillet.

Add the peppers and sauté until tender, yet still crunchy.

Add the shrimp and cook until they are pink.

Next, add the sauce and cook for two minutes or until the sauce is thickened a bit. Remove from heat.

Divide the shrimp, rice, and steamed broccoli into four meal prep containers. I used 1/3 cup rice and 6-7 shrimp per container. Sprinkle the peanuts on top of the shrimp. Enjoy!

Tip: Gochujang is a #Korean hot sauce that I really love. Try it!!

I kept it simple today for meal prep… I sautéed a coleslaw mix with salt, pepper, and a little bit of apple cider vinegar, cooked rice, and I used a pre-cooked @costco pulled pork for my protein. 👍 less than 20 minutes and I have four meals for the week. I also made another batch of egg bites from last week for my breakfast meals👊

In this post series, I will share why mealprep works for me and my family.

I’m a full-time working mom of boys who are busybodies, especially during this time of the year with not only school but, sports and social events.

I’m not saying that my children will eat all or any of the meals that I share here but, having even the fruit and veggies that they do eat, prepped and ready to go makes a huge difference during a busy work week. Also, let’s be honest, a #hangry mom is a useless mom. 🤣

This delicious egg tortilla is the perfect breakfast. 320 calories, 28 grams of protein via 2 eggs and cottage cheese, plus spinach, red onion, salt, and pepper for a flavorful bite! Also, look at that sunshine! ☀️ Happy Friday, my friends!

In case you were wondering, the trick is to flip the Tortilla onto a plate and then back into the pan 👍

Meal prep - Honey Garlic Salmon Bites with rice an

Meal prep - Honey Garlic Salmon Bites with rice and veggies.

I used about a pound and a half of salmon fillets. Always wild caught from @traderjoes or @costco I removed the skin and cut them up into bite size pieces and marinaded them in 1 tbsp sesame oil, 1 tbsp @bragg liquid aminos, 1 tbsp honey, 1 tbsp avocado oil, 1 tsp salt, and a sprinkle of pepper. Cooked the salmon in a large skillet sprayed with Avo oil for about 9 minutes and then I added peppers and broccoli remnants. Cooked those up until tender but still crunchy. Finally, I added 3 cloves of minced garlic and sautéed for another minute. All done! I did sprinkle the salmon with black sesame seeds too.

I also made the rice in the meantime. I use jasmine rice cooked in vegetable broth. 👌

This is delicious, and super easy to make. #onepanmeal

Lángos / Langoși - a street food in Hungary and Romania. I craved it and I made it yesterday. So good. Not very healthy. I did use Avo Oil for frying 😉 Usually these are topped with cheese, sour cream, garlic oil, cinnamon sugar.. I even made a pb&j with one for my kid.

Ingredients are simple: flour, salt, sugar, instant yeast and warm milk. Let it proof, shape then fry! 👌

Sometimes after I cook really good bacon, I save the bacon grease and keep it in the fridge to use in various recipes. I used a dollop this time to make these spinach scrambled eggs.
