• Thai Turkey Meatball Salad

This salad is so fresh and so easy to put together. It can easily be prepped in advance too, and simply constructed minutes before your meal. The idea is very similar to the Thai Meatball Lettuce Wraps I have posted. However, it doesn’t involve as many ingredients. I guess its a simplified version for a quick weeknight meal. Let me know how you like it! XO

  • Taco Seasoning

With Cinco de Mayo fast approaching, I thought I’d share with you the recipe for the Taco Seasoning I have been using for over a year now. • Vietnamese Pork Chops with Green Papaya Salad+Somen

I am in love with this Green Papaya Salad. This is my second time making it and it just gets better and better. This time, I added Somen noodles to it and served it with Vietnamese Pork Chops. So very delicious. Oh yea, it also only takes 30 minutes or less to make it all. You can prep the veggies the night before, cook the noodles the day of and then toss them all in the dressing. Quick, fresh, healthy and most of all, delicious. The pork chop marinade is one of the best I have had. If you are able to, marinade the chops for a little longer than the…

  • Bean Salad

I love the freshness of this salad. It is also super light and easy to make. I used fresh beans which I soaked over night and then boiled in salty water with a bay leaf, for about 45 minutes. You can use canned beans if you wish. I basically cleaned out my fridge with the rest of the ingredients in this dish. Nothing goes to waste in this house. Here’s the recipe. Enjoy!
