    Chicken Sausage Stew with Potatoes

This Chicken Sausage Stew with Potatoes is delicious, easy to make, and on the table in under 25 minutes. Grab the recipe below! Inspired by a dish I have grown to love at an early age. A Hungarian inspired dish, of potatoes and paprika. It was a staple in our household and well-loved by all. #ad This post is a paid partnership with Al Fresco Chicken. However, all opinions and thoughts in this post are my own. Thank you for supporting this blog and the brands that make it possible! I used Al Fresco Sweet Italian Style Chicken Sausage in this version of the dish, with sweet red peppers, celery,…

  • Roasted Chickpeas

    Roasted Chickpeas

I love chickpeas and I especially love roasted chickpeas. They are a great addition to any meal and a wonderful snack too. If you haven’t tried them or made them yet, you are definitely missing out. So good!! Love an easy recipe? This is the easiest thing you will ever make. All you need is a can of chickpeas, your favorite spices, avocado or olive oil, a baking pan and an oven. I use avocado oil in most of my cooking but, olive oil works well here too. Start by opening that can of chickpeas and drain them. Rinse the chickpeas and place them on a plate lined with paper…

  • Cornbread Muffins

    Cornbread Muffins

Cornbread Muffins make a wonderful side for all of those comfort meals that we crave once in a while. Or, comfort meals that I crave daily during these Michigan winter months. These Cornbread Muffins happened because I made my Chili Recipe and needed something to go with them. We usually eat chili with Fritos or crackers but thought I’d go for something homemade and even more delicious this time. Now, this recipe makes a batch of  22-24 muffins, depending on how well you fill each cup. So, cut the recipe in half if you don’t need so many muffins. These Cornbread Muffins freeze really well too and get warmed up real…

  • Creamed Spinach with Eggs

    Creamed Spinach with Eggs

Me and this Creamed Spinach with Eggs dish, go way back to my childhood in Romania. My mother made this Creamed Spinach with Eggs dish often and I imagine it was due to the fact that this is a very inexpensive meal to make and that it’s quick to get on the table for a family of five. It’s also very delicious and filling. Sorry Mom but, I made this my own with a few added ingredients. 🙂 All you need is some essential kitchen ingredients and cooked greens. I used spinach here, but you can substitute with whatever cooked greens you wish. Like: Swiss chard, dandelion greens, etc. I…

  • Charcuterie Board

    Charcuterie Board

Are you ready to receive those guests?  Whether for the holiday season or a friendly get together, a simple Charcuterie Board with all the delicious bites is sure to get your guests eating and enjoying themselves.  The word Charcuterie is French, and it means cold cooked meats. While I love the cold cooked meats idea, I do need to pair them with cheeses, breads/crackers, fruit, veggies and nuts. I mean, why not?! So, this is my kind of Charcuterie Board. Add a glass of fine wine and i’m content! The more colorful, the better. And all these different textures on one platter make me so happy. So, for a holiday…

  • Butternut Squash Soup

    Butternut Squash Soup

This soup came together easily and very quickly, on a Tuesday afternoon after a long day at work. I had purchased a Butternut Squash at Trader Joe’s with zero plans for it. It’s the season, it was pretty and I just had to have it. Similar story to a lot of the items I pick up at grocery stores lately. Naturally, this squash was sitting on my counter for about a week. I got home and needed a quick meal, so I decided it would be a soup kinda day. It took less than 30 minutes, and it turned into the best Butternut Squash Soup I have ever tasted.…

  • Healthy Chicken Tacos

    Healthy Chicken Tacos

We love tacos around these parts. And we’re making them at least once a week. When you are busy like we are with work and kids, getting home and cooking a healthy weeknight meal could be challenging. Tacos are a great addition to our rotating dinner list because they are easy to make. They don’t require much effort or time, which is nice. Usually we go with beef tacos and I can’t remember the last time we had chicken tacos. Well, I needed to switch things with these quick healthy chicken tacos on iceberg lettuce. Chicken tenders are ideal for this recipe, which I boiled for about five minutes, shredded them…

  • Poppy Seed Pancakes with Lemon

Happy weekend, friends! When your kids ask for pancakes for breakfast you don’t deny them. You make them and then reward yourself with a couple, or five. These Poppy Seed Pancakes with Lemon are to die for. Of course my kids did not eat these as they prefer their pancakes plain with syrup. So scratch the poppy seeds in this recipe for a batch of plain delicious pancakes. I love anything with Poppy Seeds so much. My obsession started when I was growing up in Eastern Europe. It’s a very popular dessert filling especially around the holidays.  So I found this Poppy Seed Pastry Filling at my local Kroger.…

  • Flavorful Egg White Omelet

Good morning, friends! It is just another Saturday morning in the Hiller household. Why is it that on weekdays the kids need to be woken up but on weekends they wake up just fine and super early too?! I will never understand… I am a breakfast lover. Are you?  This is a quick and easy breakfast that could be made with a variety of ingredients. For example: Replace the mozzarella cheese with Feta cheese and add a little red onion to saute with the spinach for a Greek style omelet. I used the egg whites only, because I had them leftover from a dessert I made. Feel free to use…
