    I was obsessed over watermelon salads all summer long. Actually, I am still obsessing… I tried many variations and none of them disappointed. This mix was especially crisp and tasty. The crunchy cucumber, juicy watermelon, sweet mango, spicy jalapeño and the basil make a wonderful union. Then, you add the dressing and OMG. I made this for some wonderful ladies a few weekends ago, while we were spending a weekend away at a beautiful cottage on Lake Huron.     These Blueberry Oatmeal Muffins are perfect to make ahead for a few days of breakfast or snacks. Meal prep has helped me tremendously by eliminating the “What are we eating?” stressors.   • Coconut Curry Chicken with Cauliflower Rice

    A few of you asked for this recipe yesterday. So here it is! 🙂 Please let me know how it turned out when you do make it. This is an easy dinner for curry lovers. It can be served over rice too and even noodles would be delicious with it. I cooked one large chicken breast, which I butterflied then cut up into strips. I cooked the strips on a grill pan until browned, removed to a bowl, then let them rest for a few minutes. The chicken could also be cubed, whatever you prefer.
