Fall is upon us, my friends! It is my favorite season of them all. Why? • Zucchini Bread with Chia Seeds and Almonds

Zucchini Bread with Chia Seeds and Almonds

Happy Friday, friends!! What a perfect and rainy day to do some summer baking. I have been working on perfecting this Zucchini Bread recipe this spring. I made several versions of it, with different ingredients, and this Chia Almond version won. It is so delicious, seasonal and on the healthier side. I made it with only 1/2 cup of sugar and added coconut oil instead of generic oil. The addition of the Chia Seeds and raw almond slices, give it a nice texture. I sprinkled the top with Domino Honey Granules and more almonds to give it a nice sweet, crunchy crust. The zucchini keeps the inside nice and moist…

  • Walter's Birthday Cake

Our Walter is six years old today. He was born on 11/11/2011. He’s a special pup. I remember the first time when I saw him at an adoption event… He was 8 weeks old. He was so sweet, quiet and calm. After about an hour of waiting, my husband and I were informed that he would be ours. He continued to be sweet and sleepy during the long car ride home. The next day, Walter was no longer quiet and calm. My husband swears that he was drugged during the adoption event. During the first six months, we lost a few  couch pillows and a pair or two of shoes.…

  • No-Rise Pastry Dough

Okay… I’m starting to like baking more and more. Not a pro at it by any means, but I definitely have fun with it. This pastry dough, I experimented with last weekend. It requires zero rising time. I like that as its quick and so good! I made Poppy Seed Pastries, as well as Strawberry Mascarpone Rolls. Both turned out delicious and were eaten for breakfast with coffee or as a sweet treat after dinner or before bed… oops! I love poppy-seed rolls. If you ask any Eastern European about these delicious treats, they will know exactly what you are talking about. These rolls were a staple at every holiday…

  • Sage + Blackberry Scones

I know, it’s technically still summer. But it sure feels like fall here in Michigan. The cool temps are quite refreshing and perfect for baking. These Sage + Blackberry Scones were a real treat over the long weekend. I’m not sure about you, but I really enjoy a nice cup of coffee with a savory treat or two. Cover me up with a light blanket on the couch, and I’m content. Except, it wouldn’t last very long. Ahhh the mom life! Luckily I have a decent imagination. Anyway, I love how versatile the base dough of scones can be. The sky is the limit with what you mix in there.…

  • Spirulina+Coconut Oatmeal Bites

Have you heard of Spirulina powder? I started using it last week actually, in a smoothie bowl. I loved it. This morning I decided to make oatmeal bites using Spirulina powder. They came out great and they were so easy to make. The recipe is very similar to the oatmeal bites I have made in the past, only it’s even easier and with less ingredients. This article by the Welness Mama on Spirulina is a nice easy read. Read it here Spirulina Benefits if you are interested in it. Based on this article and many others I read on Spirulina, I decided to try it mostly because of all the running I’ve…

  • BANANA BREAD WITH CHIA SEEDS

Happy Friday, everyone! I was up early this morning and for once my boys slept in a little. By little, I mean they woke up at 7:15 AM instead of 6:30 AM. We are making progress in the Hiller household with this sleeping-in situation. Because I started the day in good spirits, I decided to treat my co-workers this morning by making this easy banana bread. This is what a little time on my hands will do. Oh, and several ripe bananas played a key role. The finished product was quite tasty and it was well received. As for the Chia Seeds, I’ve been using the Wheat Montana – Organic Whole…

  • BLACKBERRY + CHEESE GALETTE

Hi, I’m Hannah and I have a serious sweet-tooth.  I am always looking for something sweet to snack on. If you follow my food adventures on Instagram, you can see that I opt for a lot of fresh fruit to satisfy said sweet-tooth. Once in a while, however, I like to splurge… And when I splurge, I splurge real GOOD! This Galette will be as sweet as you want it to be, basically. The power is in your hands as far as its purpose. Are you making it for dessert or as a semi-sweet brunch treat? So I’ve been making this cheese mixture for years now. It is something that my Mother used…
