How to make it? It’s simple!
I usually clean out my refrigerator for these types of meals for leftover vegetables from other meals. For this batch, I used zucchini, onions, yellow pepper, orange pepper, garlic, and fresh parsley. I also keep ALFRESCO chicken sausages on hand at all times in my refrigerator. It’s a delicious go to and it comes in so many varieties to satisfy all those taste buds.

For this meal, I used the Sweet Apple with Vermont Maple Sugar Chicken Sausage. It is delicious!
First, I cut up all the vegetables and placed them in a large bowl. Then, I tossed them with Avocado Oil, salt, pepper, and Italian seasoning. Finally, I lined a sheet pan with parchment paper and placed the vegetables on it.
The oven was ready at 400 degrees and cooked the vegetables for 15 minutes. After the 15 minutes, I added the fully cooked ALFRESCO sausage to the sheet pan and baked it all for an additional 10 minutes. To crisp up the tops of the sausages, I turned on the broiler on low for 4 minutes. This is optional.
I chose Jasmin rice to pair with this meal and it was delicious. You may pair with anything you wish including quinoa or pasta. you may even wrap a sausage and vegetables into a tortilla. There are so many options for this.

Healthy Sausage Meal Prep
This Healthy Sausage Meal Prep is my go to meal prep recipe for easy lunches or dinners. Ready in under 30 minutes and easy to store for quick meals during the week. Or, whenever you need it.
Ingredients
- 1 pack Alfresco Chicken Sausage Any flavor
- 1 Yellow Pepper, sliced
- 1 Orange Pepper, sliced
- 1 Onion, sliced
- 1 Zucchini, sliced
- 2 cloves Garlic, minced
- 1 tbsp Avocado Oil or Olive Oil
- 1 tsp Italian Seasoning
- 1 tso Kosher Salt or to taste
- 1/2 tsp Black Pepper
- 1 handful Fresh Parsley
- 2 cups Rice, cooked
Instructions

Preheat oven to 400 degrees and line a sheet pan with parchment paper. Set aside.

Prepare the vegetables by cleaning them and slicing them. Also rough chop the parsley. Add them to a large bowl.

Add the oil and the seasonings to the bowl and toss until the vegetables are evenly coated.

Add the vegetables to the sheet pan and bake for 15 minutes.

After the 15 minutes, add the Alfresco Chicken Sausage to the sheet pan and return to bake for another 10 minutes.

For a little extra color, turn on the broiler on low for 3-4 minutes before removing the sheet pan from the oven.

Serve immediately with warm rice.

For meal prep, separate the vegetables into four equal parts, add a sausage, and 1/2 cup rice to a glass container then refrigerate. Reheat as needed.
