I love chickpeas and I especially love roasted chickpeas. They are a great addition to any meal and a wonderful snack too. If you haven’t tried them or made them yet, you are definitely missing out. So good!!
Love an easy recipe?
This is the easiest thing you will ever make. All you need is a can of chickpeas, your favorite spices, avocado or olive oil, a baking pan and an oven. I use avocado oil in most of my cooking but, olive oil works well here too.
Start by opening that can of chickpeas and drain them. Rinse the chickpeas and place them on a plate lined with paper towel. Dry the chickpeas off by patting them with a paper towel. You’ll want to dry them really well so that the spices attach to them evenly.
Next, in a small bowl, combine the spices and the oil then toss the chickpeas with the mixture. Finally, line a baking sheet with parchment paper, add the spiced chickpeas and roast them in a 400° oven for 20 minutes. Until golden, crunchy and delicious.
Enjoy them as a healthy snack or as a salad topper.
The sky is the limit as far as the spices are concerned. I was feeling the cumin and garlic combo when I made these but try them with whatever you prefer!
Here’s a salad idea using these Roasted Chickpeas. Add a good handful of mixed greens to a salad bowl. Top with Roasted Chickpeas, scallions, cucumbers, tomatoes, avocado, and sweet peppers. Serve with your favorite dressing. I enjoy Sir Kensinton’s Classic Ranch. Yum!

Golden, crunchy and delicious Roasted Chickpeas. Perfect as a snack, a side or a salad topper.

Ingredients
- 1 15oz Can chickpeas (Garbanzo beans)
- 1 Tbsp Avocado or Olive Oil
- 1/4 Tsp salt
- 1/4 Tsp Cumin
- 1/4 Tsp Garlic powder
- 1/8 Red Pepper Flakes
Instructions
- Preheat oven to 400 degrees.
- Drain and rinse the chickpeas.
- Place them on a paper towel lined plate and pat them dry.
- In a small bowl combine the oil, salt, cumin, garlic and pepper flakes. Mix.
- Add the dried chickpeas to the bowl and toss to ensure the chickpeas are evenly covered with the mixture.
- Line a baking sheet with parchment paper.
- Add the chickpeas to the baking sheet
- Roast for 20 minutes, until golden brown.
