We love tacos around these parts. And we’re making them at least once a week.
When you are busy like we are with work and kids, getting home and cooking a healthy weeknight meal could be challenging. Tacos are a great addition to our rotating dinner list because they are easy to make. They don’t require much effort or time, which is nice. Usually we go with beef tacos and I can’t remember the last time we had chicken tacos. Well, I needed to switch things with these quick healthy chicken tacos on iceberg lettuce.
Chicken tenders are ideal for this recipe, which I boiled for about five minutes, shredded them and placed them in a saute pan with the seasoning blend and water. There’s nothing wrong with using chicken breast. However, your cook time will increase slightly to 8-10 minutes.
The seasoning blend is the best. Here’s the recipe for it: Mexican Seasoning Blend. This blend is easy to put together and makes a larger batch for use with multiple meals. Place the mix in a sealed contained and add it to your spice cabinet for easy use.
These are probably even quicker than beef tacos. Chicken tenders cook so much faster and in my opinion, which is not a professional one, are much healthier.
There’s not much more to say, other then grab those garnishes, my friends. I used iceberg lettuce, taco sauce, a little cheese, radishes and avocados to top my taco. A little fresh onion, maybe jalapenos, corn and salsa would do so much for these. That iceberg crunch is the best!!!
